Breakfast of Champions

Crappy iPhone 3 photo, but great use of Oregon strawberries

Got this recipe from Food Network recently and re-tooled it to make it a little more fancy. Delishus, low-fat and a terrific use of fresh Oregon (Mt. Hood) strawberries.

Corn muffin
Oregon strawberries
Ricotta cheese
Sea salt
Black pepper (optional)

Split corn muffin and add sliced strawberries
Spoon ricotta cheese over the top
Drizzle with honey
Sprinkle with just a touch of sea salt
Add a couple turns of fresh cracked pepper
Place a couple fresh basil leaves on top

Also makes a nice, light summer-time dessert.
